Beef and Japanese Eggplant with a Sesame Miso Sauce 牛肉となすのごまみそ炒め

One of my favorite cooking shows on TV is a daily 30 minute show called Kyo no Ryori or Today's Menu on the Japanese NHK Channel. Luckily it's also on TV Japan, the Japanese cable channel available through Comcast, so I'm able to watch it when I'm in Seattle too. Even when I'm at our Seattle home I probably watch Japanese TV about 80% of the time. I think it's so much better. The last couple of weeks on Today's Menu they've featured Japanese Eggplant dishes since Eggplant is in season right now. I love Eggplant and I really look forward to getting really good Japanese Eggplant during the … [Read more...]

Spicy Japanese Eggplant and Pork, Mapo Nasu マーボーなす

Summer is here and I am starting to see my favorite Japanese Eggplant (Nasu in Japanese) in our local Asian Supermarket and it looks beautiful! I love eggplant and I also love spicy food so of course one of my favorite Chinese dishes is Mapo (or Mabo) Tofu. Well this recipe is like Mapo Tofu but there is eggplant in the recipe in place of the tofu. It is so good believe me. I love ordering Mapo Nasu at my favorite Chinese restaurants in Tokyo but unfortunately there are no restaurants in Seattle that make it right. Most of the Mapo Nasu here is very oily. The eggplant is deep fried first … [Read more...]

Pasta with Tomato Sauce and Roasted Japanese Eggplant

Here's my first recipe post of the new year!  I thought I would surprise you with an Italian pasta dish.  Italian cuisine is very popular in Japan and Tokyo has some of the best Italian restaurants in the world.  I have tasted some of the best pasta and pizza in Tokyo.  After Japanese food I can honestly say that Italian food is our favorite to eat and one of my favorites to prepare, especially pasta.  We love pasta. When we returned to Seattle, after spending Christmas at our Tokyo home, I was craving something tomatoey with pasta.  I must crave a particular dish in order to get excited … [Read more...]

Onigiri Love for Japan (Japanese Rice Balls)

I recently spent a few days in Los Angeles at the Natural Products Expo with my friend Stacey and the company she works for.  She had invited me to go as a Brand Ambassador for her company and to tweet for them while I was there.  This was the first time I had ever been to such a show and Stacey had told me there would be many Japanese food vendors there that I could meet so I was very excited.  On our first day at the show we spent hours setting up the booth, laughing and having a great time.  The weather was sunny and warm in Los Angeles and I was happy to get out of the Seattle rain for a … [Read more...]

Nasu Dengaku (roasted eggplant w/a sweet miso sauce)

This is one of my favorite ways to eat eggplant!  This particular recipe is from my Japanese cooking Teacher in Tokyo.  Some people deep fry the eggplant but I prefer roasting it in the oven, tastes much better I think.  This recipe makes more sauce than you need, but it keeps well in the fridge and can be used on all kinds of veggies, firm tofu or even meat! for sauce 2 Tbs sugar 1 Tbs mirin 1/2 C Awase miso (mixed red & white miso) you can buy it already mixed or you can mix it yourself 1/4 C red miso and 1/4 C white miso 1 tsp hon-dashi powder or bonito powder For the roasted … [Read more...]
