One of my favorite cooking shows on TV is a daily 30 minute show called Kyo no Ryori or Today's Menu on the Japanese NHK Channel. Luckily it's also on TV Japan, the Japanese cable channel available through Comcast, so I'm able to watch it when I'm in Seattle too. Even when I'm at our Seattle home I probably watch Japanese TV about 80% of the time. I think it's so much better. Spicy Japanese Eggplant and Pork, Mapo Nasu マーボーなす

Summer is here and I am starting to see my favorite Japanese Eggplant (Nasu in Japanese) in our local Asian Supermarket and it looks beautiful! I love eggplant and I also love spicy food so of course one of my favorite Chinese dishes is Mapo (or Mabo) Tofu. Well this recipe is like Mapo Tofu but there is eggplant in the recipe in place of the tofu. It is so good believe me. Pasta with Tomato Sauce and Roasted Japanese Eggplant

Here's my first recipe post of the new year!  I thought I would surprise you with an Italian pasta dish.  Italian cuisine is very popular in Japan and Tokyo has some of the best Italian restaurants in the world.  I have tasted some of the best pasta and pizza in Tokyo.  After Japanese food I can honestly say that Italian food is our favorite to eat and one of my favorites to prepare, especially pasta.  We love pasta. Nasu Dengaku (roasted eggplant w/a sweet miso sauce)
