Roast Teriyaki Chicken 照り焼きローストチキン

Last month I was ready to make my usual Roast Chicken but decided to experiment a little at the last minute. I was craving Teriyaki or Yakitori but there was a whole chicken sitting in front of me instead of the chicken thighs I normally use. I thought I should try and make a whole roasted chicken basted with a homemade teriyaki glaze. Wow as soon as I had that thought it sounded so good to me I started recipe testing immediately. I started with something similar to my usual Teriyaki Sauce but with a little more sugar, so it would reduce, thicken and coat the chicken better when basting, … [Read more...]

Tonjiru ~ Japanese Pork and Vegetable Miso Soup

I am finally posting a Miso Shiru (Soup) recipe.  I  can't believe I have never posted one before!  Well that's changing right now with this post.  Tonjiru is a little different than regular Miso Soup it's kind of like Miso Soup on steroids.  In Japanese Ton means pig and Jiru means soup so this is a pork Miso Soup filled with seasonal vegetables.  I like to call it a Miso Stew.  It is one of my favorite soups to make during the cold Winter months and what I crave when I'm feeling a little under the weather.  I instantly feel better after having a big bowl of comforting Tonjiru. The base of … [Read more...]

Spaghetti Bolognese スパゲッティ ボロネーゼ (ミートソース スパゲッティ)

I'm posting an Italian recipe!  I actually cook Italian food quite often at home.  After Japanese food I can easily say that Italian food is one of our favorites and is very popular in Japan as well.  My earliest memory of Spaghetti Bolognese, or Spaghetti with Meat Sauce as most families call it, came from my Mom.  My mom is a fabulous cook and she always made us the most delicious and well balanced food growing up.  Everything she made was from scratch and she never fed us anything that was frozen, canned or ready-made from a package.  I don't think I really appreciated mom's cooking until I … [Read more...]

Japanese Potato Salad ポテトサラダ

I'm back in Seattle!  Yes I just returned from another trip back to our other home in Tokyo and it was filled with pretty pink cherry blossoms and of course, the best food ever.  I tweeted and instagramed every tiny morsel of food that I put in my mouth.  I always do this when I'm in Tokyo.  I guess I do the same thing when I'm in Seattle too.  Oh well what can I say?  I want everyone to enjoy the experience right along with me.  I think food tastes better when shared with friends don't you? When we are in Tokyo, and eating at one of our favorite neighborhood restaurants, I always have put … [Read more...]

Curry Udon

Japanese Curry has been a part of my life for as far back as I can remember.  My Mom made the best curry and I whenever I would smell her delectable curry coming from the kitchen it would make me very happy.  When I tell people how popular curry is in Japan they're usually quite surprised.  Curry is such a big part of the Japanese diet now and is popping up in new dishes every day.  The more common ones are curry filled bread (curry pan), curry rice, curry ramen and curry soba or udon just to name a few.  I love Curry Rice but a close second for me is Curry Udon. My favorite place to enjoy … [Read more...]
