I was experimenting with pork ribs last night.  I’ve been craving a sweet and spicy rib that is easy to make and doesn’t require any marinating ahead of time. Something quick, simple and really really good. I think this recipe covers all those bases.

I decided to try Gochujang in my ribs, a fermented Korean chili paste that I really love using in a variety of recipes. Korean Fried Chicken, which also has Gochujang in the recipe, is so popular now I knew it would taste great with ribs. Gochujang is so versatile and not super spicy. The flavor is more of a sweet, spicy taste so it doesn’t burn your mouth off. I love spicy food but I want to taste all the ingredients in a dish not just the spice.

I grew up eating Gochujang. My mother always had it around the house and often used it in her cooking but it was never my favorite. I really didn’t appreciate it until I became an adult and started preparing my own Korean dishes. I think once you try this recipe you will be hooked and I’ll say it again it’s sooooo easy!

You can find Gochujang in Asian grocery stores and even some regular supermarkets now and of course online at Amazon.

Ingredients:

3 Pounds Pork Ribs (I use the mini ones cut for sweet and sour ribs or Chinese BBQ. You can also use baby back ribs just cut them into individual ribs)

Sauce ingredients:

6 Tablespoons Gochujang

6 Tablespoons Honey (microwave for about 10 seconds to make it easier to pour & mix)

4 Tablespoons Soy Sauce

2 Cloves of Garlic, finely minced

Preparation:

Preheat oven to 400 degrees.

Combine the sauce ingredients in a small bowl and mix well. Place ribs in a large plastic ziplock bag (or mixing bowl) and pour the sauce over the ribs. Mix the ribs with the sauce by rubbing & shaking the bag well or with your hands making sure the ribs are completely coated in the sauce.

Place ribs on a parchment covered baking sheet and place in the oven for about 45 minutes, depending how thick your ribs are, turning once and brushing with the leftover sauce during the middle of the cooking time. Serve immediately.
