Linguine with Lobster Tails in Roasted Tomato Sauce

I really love lobster what can I say? I lived on Cape Cod for a few years as a child and we had the best seafood all around us especially lobster but I wouldn’t touch it. I know so strange right? Well I was a typical kid who was very picky and for me that meant I would only eat cheeseburgers and fried shrimp when my family went out for dinner. So I missed out on a lot of lobster. You can say I’m making up for lost time. Now I can’t get enough!

Lobster Tails are gong to be the star of my Valentine’s Day menu this year. One of my favorite ways to prepare lobster is with a simple roasted tomato sauce tossed with pasta. Such a perfect match for linguine, spaghetti or any favorite pasta. The lobster tails I’m using in this recipe were generously provided to me by Whole Foods in Bellevue. I have been buying seafood from them ever since we moved to the Seattle area from Tokyo. I trust the seafood at Whole Foods and know they have an extensive sustainability-rating program and that everything is carefully chosen with the highest standards. Valentine’s Day is the perfect occasion to make this dish! No need to make reservations at a restaurant months in advance and it comes together very quickly so you won’t be spending hours in the kitchen. Even if you stay home with the kids I think everyone would enjoy this special dish on this special day. I love making a beautiful dinner at home for my family. Just stay in, relax and eat good food. Sounds perfect right? I hope you and your loved ones enjoy this dish as much as we do.

Ingredients: (serves 4)

6-8 small raw lobster tails with shells on, cut in half lengthwise (kitchen scissors work great for this or ask the seafood counter at Whole Foods to do this for you)

6 tablespoons extra-virgin olive oil

3 cloves of garlic, peeled and chopped

1 teaspoon sugar (if your tomatoes are super sweet you can leave this out)

4 shallots sliced

1 cup dry white wine

6-8 medium sized fresh tomatoes, cored & chopped into quarters

1 pound linguine, spaghetti or pasta of your choice

Fresh Basil, torn into small pieces

sea salt to taste

1/4 to 1/2 teaspoon crushed tea pepper flakes (or more if you like it spicy)

Instructions:

Preheat oven to 400 degrees. Add tomatoes, 3 tablespoons olive oil, chopped garlic, sugar & red pepper flakes to a baking dish and toss ingredients together. Place dish in oven and bake for about 30 – 45 minutes until tomatoes are soft and their juices are released. Depending on the size of your tomatoes this may take longer. Remove from oven, add sea salt to taste and set aside.

Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add sliced shallots and sauté for a few minutes until slightly softened. Add lobster and cook, turning the lobster pieces over a few times, for about 5-7 minutes until shells start turning pink. Add the wine and cook until alcohol has evaporated, about 3 minutes. Set aside.

Cook pasta in a large pot of boiling salted water over high heat according to package directions. Drain pasta into a large bowl and add the tomato sauce then add lobster tail mixture and toss. Serve garnished with basil.
