Turkey Meatloaf

turkey meat loafThis meat loaf is a version of the Barefoot Contessa’s turkey meatloaf recipe, I just made a couple of changes that I think make it a little better.  It tastes like an old fashioned meatloaf but since it’s made with turkey it’s also much better for you.  This serves 4 with enough for leftovers.

Ingredients
1 1/2 cups chopped yellow onion (1 lg onion)
2 cloves garlic finely chopped
2 Tbl good olive oil
1 tsp sea salt or kosher salt
1/2 tsp freshly ground black pepper
1 tsp fresh thyme
1/4 cup Worcestershire sauce
1/2 cup chicken stock
1 1/2 tsp tomato paste
3 lbs Ground Turkey Breast
1 cup panko bread crumbs
2 Tbl milk
2 large eggs
1/2 cup ketchup
1/2 cup BBQ sauce

1.  Preheat oven to 325*.  Drizzle milk on panko in a small dish & mix slightly to soften.

2.  In a medium sauté pan, on medium-low heat, add olive oil and cook the onions, garlic, thyme, salt and pepper until the onions are translucent but not browned, about 15 minutes.

3.  Add the Worcestershire sauce, chicken stock and tomato paste and mix well.  Allow to cool to room temperature.

4.  Combine the ground turkey, softened bread crumbs, eggs and onion mixture in a large bowl.  Mix well and shape into a rectangular loaf on an ungreased baking sheet.

5.  Spread the BBQ sauce evenly on top.  Then drizzle the ketchup on top of the BBQ sauce.

6.  Bake for an hour until the internal temperature is 160* and the meat loaf is cooked through.  Serve hot, room temperature or cold in a sandwich.  Great with mashed potatoes or my favorite, Japanese rice!

  1. I’m working on one now with a spicy chipotle ketchup… will have to share with you as turkey meatloaf is such a great thing to enjoy! Interesting how these ingredients are so basic but yield great taste! 😉
