Simmered Spicy Pork Harusame (Japanese Sweet Potato Starch Noodles) w/eggs on top

Ingredients

Ground pork 1/2 lb
Harusame (Japanese Sweet Potato Noodles) 100 grams (about 1/2 of the pkg I bought)
Spinach 1/2 bunch chopped
Scallions 3 chopped
Ginger 2 teaspoons chopped
Garlic 2 teaspoons chopped
Crushed red pepper flakes 1/2 teaspoon
Eggs
Canola oil
Sesame oil

Seasoning group A

Salt & pepper to taste
Sake 1 Tablespoon
Soy Sauce 1 teaspoon

Seasoning group B

Sake 1 Tablespoon
Water 2 cups
Soy Sauce 3 Tablespoons
Salt 1/2 teaspoon
Sugar 1/2 teaspoon
Oyster sauce 1 teaspoon

1. Soak Harusame noodles according to directions on package

2.  Sautee ground pork in canola oil on med/high heat until cooked halfway, add seasoning group A, plus garlic, ginger & red pepper flakes and continue cooking until pork is fully cooked.

3. Add Seasoning group B and simmer on med/high heat for 2-3 minutes then add harusame & cook until liquid is reduced by half.

4.  Add chopped spinach & scallions and toss until spinach wilts, then add a drizzle of sesame oil and serve with one or two fried eggs on top (I fry the eggs in sesame oil)
